TSH’s Diamond Cookie:
Coconut Salted Chocolate
Chocolate Chip Cookie

Warning: Synonymous to the diamond which also means “I tame”; this cookie is highly decadent & may only take one to tame your chocolate madness!
Mise En Place:
Makes about 2 Dozen
- Godiva Chocolate Chips with *52% Cocoa.
- Organic Unsweetened Coconut Flakes 4 oz.
- Kosher Coarse Salt (for finish)
- (Swans) Cake Flour 10 oz.
- 2 Large Eggs
- Unsalted Butter 5 oz.
- Granulated Sugar 4 oz.
- Light Brown Sugar 4 oz.
- Vanilla Extract 1 tsp
- Baking Soda 5/8 tsp or .12 oz.
- Kosher Salt *3/4 tsp if finishing.
Suggested Equipment: Standmixer
Steps:
Line Cookie Sheets with Parchment Paper.
All ingredients at Room Temperature: Flour, Eggs & Butter
Step 1: Cream together Butter, granulated & brown sugars, and the vanilla extract until there’s a smooth consistency.
Step 2: Add Eggs
Step 3: In a separate mixing bowl add the grounded salt, and baking soda to cake flour, thoroughly stir the dry content until well blended. Sift twice.
Step 4: *Heat oven to 375. Place middle rack in position
Step 5: Next combine the dry ingredients to butter mixture. Stop & scrape down sides and continue mixing until base dough is formed.
Step 6: Add in coconut flakes until well distributed.
Step 7: After, add the chocolate chips. Again mix until well distributed.
Step 8: Use Step 3 Cookie Scoop or 3/4 amount of an ice cream scoop for size. Spacing 2.5 – 3 inches apart. And last *Lightly Sprinkle with Coarse Salt.
Step 9: Bake for 11 mins or until just lightly golden. The cookie should and will appear “undone”. It will set at cooling.
Step 10: Keep cookies on baking sheets for 5-7 mins then transfer to a cooling rack. This will avoid cooling too soon, resulting in a hard crispy base.
Step 11: When cookies have cooled, store in an airtight container.
Note about Sodium:
Eliminate this step if there are sodium restrictions to consider. Or choose and distinguish 1 sheet for salted & one for unsalted. Cool and store separately. You will notice after baking, they will look slightly different.
